Post T-Day Cleansing Soup Recipe

If you are anything like me, Turkey Day does a number on you! Bloating, a break out, little fatigue all signs of a Thanksgiving well done! However, now that it is the Monday after, it's time to feel better. So I made a big ol' batch of cleansing veggie soup to do the trick! Hope you enjoy!

Ingredients: 
2 tbls Coconut Oil
5 Cloves of Garlic
1 Onion
3 Bay Leaves
1 bundle of Celery
5 Carrots
2 Cups Broccoli 
1 Parsnip
1 Turnip
32 oz Organic Chicken Stock
16 oz Water
1 Cup Quinoa
Bushel of Dandelion Greens
Bushel of Bok Choy
Fresh Parsley
Sea Salt
Pepper

In large soup pot, sautee garlic and onion in the coconut oil. When brown and translucent add bay leaves and chopped celery, carrots and broccoli. Add stock and water and bring to a boil. Add quinoa, full parsnip and turnip and simmer. When parsnip and turnip are soft, remove, chop and put back in to pot. Add chopped Dandelion, Bok Choy and parsley and season accordingly. Let cook on medium heat until all flavors blend and marry each other! 

This baby serves an army as I plan on eating it all week long. However, freeze if you don't think you will get through it all. 

From the anti-inflammatory properties of the garlic to the detoxing effects of dandelion greens this baby is a mouth full of body-happy awesomeness. Also, it's warm, made with love and tastes great!
